Tahini Espresso Trifle

There’s more to holiday dessert than gingerbread. For an elegant Christmas dessert that is easy, quick and impressive, a trifle cake is one of the best holiday desserts for a crowd.

We’ve kicked up a classic recipe and added an element of depth to the layered after-dinner indulgence – with Krinos tahini.

Tahini – This luscious sesame spread adds warmth and silkiness to an already colourful and comforting dessert – paired with tiramisu-inspired flavours, and a hint of espresso and raspberries.

It looks more complicated than it is – but once you break it down, the Espresso Tahini Trifle is not a difficult dessert to make at all. You can make it in stages and in advance, allowing the flavours to meld, well before guests arrive.

Step 1: Start by making the raspberry sauce. To begin, in a small bowl, combine 2 tbsps. of sugar and cornstarch then mix well. In a medium saucepan, heat ¼ cup of water and 1 package of thawed raspberries to boil. Reduce heat to low and add cornstarch mixture, whisking until well combined. Simmer, whisking until mixture is thickened and just coats the back of a spoon. Remove from heat and cool to room temperature.

Step 2: In a large bowl, combine ½ cup of Krinos Tahini with ¼ cup of milk and blend until smooth. Stir in ¼ cup of liquid honey until smooth.

Step 3: With an electric mixer, beat 2 cups of cream until soft peaks form. Begin folding whipped cream into tahini mixture, one cup at a time until fully combined.

Step 4: In a medium bowl, combine 1-1 ½ cups of espresso and 3 tbsps. Grand Marnier (optional). Dip each lady finger in espresso mixture to coat both sides. Do not allow the cookies to become soaked. Place one-quarter of the cookies in a single layer on the bottom of a trifle bowl, cutting to fit if necessary.

Assemble the layers: Spoon one-quarter of the raspberry sauce over the first layer of lady fingers and then top with 1/4 of the tahini cream. Dust lightly with cocoa powder. Repeat three more times finishing with tahini cream.

Refrigerate for 2 hours or more. When ready to serve, arrange fresh raspberries on top of trifle and lightly dust with cocoa if desired. Garnish with fresh mint leaves, and serve.

Canadian Paralympic Sprinter Marissa Papaconstantinou Sponsored by Krinos Canada

Krinos Canada announces its partnership with Toronto, Ontario sprinter Marissa Papaconstantinou. The Canadian record holder and Ryerson sports media student is a medal favourite heading into the 2019 World Para Athletics Championships in Dubai this November. But her ultimate goal is to be atop the podium at the 2020 Tokyo Paralympics. 

Being born without a right foot has never got in the way of Marissa pursuing what she wanted to achieve in life. Originally a soccer and basketball player, Marissa fell in love with track after being fitted for her first running blade at the age of 12 at Holland Bloorview Kids Rehabilitation Hospital. She joined a local track club and a year later was the Canadian record holder. At the 2016 Paralympics in Rio, Marissa finished 9th in the 100m but was disqualified during the 200m finals for stepping on the line. Seeking redemption at the 2017 World Championships, Marissa placed 6th in the 100m. Then while sprinting to the finish line in podium position in the 200m, Marissa tore her hamstring. Despite agonizing pain and heartbreak, she got up and finished the race in dramatic fashion, with the support of 40,000 cheering fans. Images from that moment went viral on social media all around the world.

Fully recovered from her injury, Marissa has continued to improve her personal best times. At a recent competition in Switzerland, Marissa took a half-second off her 100m PB and became the 100m and 200m Canadian record holder in her class.

Marissa was born and raised in Toronto where she currently resides, trains and studies. Marissa is an experienced public speaker and she hope’s her story and journey of hard work and perseverance will inspire young Canadians and bring to light the amazing talents of Canadian Paralympic Athletes.

 


Prior to bursting onto the world stage at the 2015 World Championships at just 16 years of age, Marissa had spent most summers with her family in Greece. She carries a deep pride of her heritage and has a fondness for Greek cuisine.

Revamped Thanksgiving Sides

In many families, Thanksgiving is as much about food as it is about family. Between the turkey, the mashed potatoes, the pumpkin pie, it’s all so delicious and comforting. But the star of many thanksgiving dinners has got to be the traditional turkey stuffing – hands down.

While it may seem a bit risky to change up a Thanksgiving tradition, our take on a vegetarian baked stuffing will appeal to all palettes, and we’re certain this quick and easy side dish will quickly become a new family fave around your Thanksgiving table.

In a large skillet, heat ¼ cup butter and oil over medium heat and sauté 1 large onion and 4 stalks of chopped celery until softened. Add chopped sage and 2 cloves of minced garlic and continue to sauté for two more minutes. Remove from heat.

In a large bowl, combine onion mixture with 1 loaf of day old bread (cut in chunks) and mix well. Cover bread mixture with 1 cup of vegetable stock to combine. Add 200 g package of crumbled Organic Feta Cheese, ½ nuts (chestnuts or walnuts are our picks), and 2 tbsp of chopped parsley. Season with salt and pepper to taste.

Meanwhile, preheat the oven to 350f and grease a 13×9 casserole dish with butter. Bake stuffing mix in casserole dish uncovered for 45 minutes or until stuffing is hot and top is lightly golden brown.

Whether you’re hosting or attending a thanksgiving dinner this year, this perfectly savoury vegetarian baked feta stuffing packs a lot of punch and will surely be a staple for years to come.

HOSTESS TIP: You can prepare the stuffing ahead of time and refrigerate until your guests arrive, ensuring a hot stuffing to serve alongside your dinner.

Easy Weeknight Dinners

The start of the school year is usually busy with new routines, schedules, and activities. But weeknight dinners don’t have to be complicated, time-consuming or boring.

It sounds a lot fancier than it is, but with a few simple ingredients, our Creamy Feta Gnocchi will become a staple weeknight meal for your family. It can be made in a pinch and will even double as leftovers the next day – that is, if there are any.

To start, cook a package of gnocchi as directed. Meanwhile, in a large skillet, heat a tablespoon of Krinos Olive Oil over medium heat and sauté 2 chopped shallots and 1 clove of garlic for 2 minutes, or until fragrant. Add 1 cup of 18% cream (it’s worth it), and sauté until it starts to bubbles. Add chopped sundried tomatoes along with 200g of crumbled Krinos Organic Feta and stir until it’s fully melted. Transfer the cooked, drained gnocchi into the pan and coat with cream sauce. Add spinach and toss just until it starts to wilt.

Season with salt and pepper. Serve immediately and watch your family savour it, before running off to their next activity.
