Instructions
- Cook pasta according to package directions. Set aside.
- In a large pot, add olive oil, then onions, carrots, celery, and salt (optional). Simmer on medium heat until softened (5-7 minutes).
- Add vegetable mixture, 1 cup of broth, and passata in a food processor.
- Once blended, place the mixture back into a large pot. Add the remaining broth, lemon juice and parmesan. Let simmer for 15 minutes.
- Add pasta into pot before serving.
