Krinos Toddler Approved Pasta Soup

INGREDIENTS

6 cups low-sodium chicken broth, divided
1 tbsp Krinos Extra Virgin Olive Oil
1 medium onion, diced
2 carrots, peeled and diced
2 celery ribs, peeled and diced
1/2 lemon, juiced
3 tbsp passata
1/3 cup parmesan, shredded
Salt (optional)
1.5 cup Melissa Pasta Kids

INSTRUCTIONS

  1. Cook pasta according to package directions. Set aside. 
  2. In a large pot, add olive oil, then onions, carrots, celery, and salt (optional). Simmer on medium heat until softened (5-7 minutes). 
  3. Add vegetable mixture, 1 cup of broth, and passata in a food processor. 
  4. Once blended, place the mixture back into a large pot. Add the remaining broth, lemon juice and parmesan. Let simmer for 15 minutes. 
  5. Add pasta into pot before serving.
