Ingredients
• 1-cup bulgur (cracked wheat)
• 4 green onions, finely chopped
• 250 g Manouri cheese
• 6 large lettuce leaves
• 1 1/2 cups flat-leaved parsley, finely chopped
• 1/2 cup fresh spearmint, finely chopped
• 2 medium tomatoes, finely chopped
• 1 cup lemon juice
• 1/2 cup olive oil
• salt, pepper & ground cinnamon

Instructions
Preparation
1. Boil the bulgur in salted water for 1 1/2 hours adding water as needed.
2. Drain and let cool.
Cooking
1. Chop all the ingredients fine and mix with bulgur in a large bowl.
2. Season with pepper and cinnamon.
3. Add olive oil and lemon juice, stirring well.
4. Place lettuce leaves on a large tray and cover with bulgur mixture.
5. Slice cheese and place on tray.
6. Serve chilled.
Serve with seafood dish or stuffed vine leaves.
Accompany with beer.
