Instructions
1.Prepare the tzatziki: In a small bowl combine the greek yogurt, chopped dill, rasped garlic clove and kosher salt. Mix until even and refrigerate until ready to serve, note: that this can be done up to 2 days in advance.
2.Cut the halloumi cheese into ¼ inch slices.
3.Heat a non-stick or cast iron skillet on high heat and add in the olive oil
4.Begin frying the sliced halloumi for 1-2 minutes per side until deeply golden-brown, removing from the pan once both sides are browned and repeating the process with more oil if necessary until all of the halloumi has been fried. Squeeze some lemon juice over the fried halloumi while they are still warm
5.Assemble the pita wraps: in the center of each pita spread a few tablespoons of the tzatziki followed by the arugula, sliced cucumber, sliced tomato, sliced red onion and then 3-4 slices of the fried halloumi. Wrap to close and serve with a lemon wedge
