Capers are the flower buds of the caper bush. They originate from the North African coast of the Mediterranean Sea as well as Europe. The buds are handpicked, sun-dried and pickled in vinegar brine to preserve their freshness and zestful flavour. Generally chopped to add to sauces and dressings, their pungent flavours makes them an excellent addition to traditional Mediterranean recipes such as veal, chicken and fish dishes.
