Meat and Potato Casserole with olives & tomatoes

INGREDIENTS

• 1/2 cup Krinos Olive Oil
• 2 onions, finely chopped
• 4 servings cubed beef
• 2-3 ripe tomatoes, coarsely chopped
• 1 tsp. mint, finely chopped
• 1 tsp. cumin
• Salt & pepper
• 2 lbs potatoes, thickly sliced
• 8-10 black olives

INSTRUCTIONS

Cooking
1. Heat oil in a pan.
2. Add onion and sauté until golden.
3. Add meat, tomato, mint, cumin, salt, and pepper. Let cook for 25 to 30 minutes.
4. Fry the potatoes and olives together in a separate pan.
5. Combine potatoes and olives with the onions and continue cooking for 5 minutes. Serve hot.
