Creamy Roasted Red Pepper Pasta

INGREDIENTS

1 jar Krinos Roasted Red Peppers, drained
1/2 cup vegetable stock or water
1 cup heavy cream
10-12 fresh basil leaves
1.5 tbsp Krinos Green Olives, chopped
1/2 cup parmesan, grated
1/2 tsp salt
1 tbsp Krinos Olive Oil
1 box pasta of choice

INSTRUCTIONS

  1. Cook pasta according to package instructions. Set aside 1/2 cup reserved
  2. pasta water.
  3. Add red peppers, cream, basil, olives and salt into a food processor or blender and blend until smooth.
  4. On medium heat, add olive oil and sauce mixture. Slowly add stock to sauce and warm through. Add parmesan to sauce and mix well.
  5. Add in cooked pasta and combine. Use reserved pasta water to reach your preferred sauce consistency. Garnish with fresh basil and parmesan.
