Beef & Halloumi Skewers with Chimichurri

INGREDIENTS

500 grams Beef (rump), cubed
2 packages Krinos Halloumi Cheese, cubed
Salt and Pepper
2 tbsp olive oil
Skewers

For the chimichurri:
1 cup Fresh Parsley (or 2/3 cup parsley, 1/3 cup cilantro)
1 tbsp Fresh Oregano
2 Garlic Cloves
1/3 cup Olive Oil
2 tbsp Red Wine Vinegar
1 tsp lemon juice and ½ lemon zest
1 tsp chili flakes
½ tsp salt

INSTRUCTIONS

  1. Season the cubes of beef with salt, pepper, and a drizzle of oil. Thread the beef and haloumi onto skewers. 
  2. In a food processor, add all the chimichurri ingredients and process until smooth. Add water to thin out the chimichurri. Take 1/3 of sauce and place in one bowl, setting aside the remainder. 
  3. Preheat the grill on medium-high. Cook skewers for 4-6 minutes, turning once. Using the 1/3 chimichurri sauce, baste the skewers 1 minute before removing from grill.
  4. Serve skewers with remaining sauce.
