Baked Potatoes
with Kalamata olives


• 2 lbs potatoes
• Salt & pepper
• 1 tbsp. parsley, finely chopped
• 1 tbsp. mint, finely chopped
• 1 ripe tomato, finely chopped
• 2 tbsp. Krinos Kalamata Pitted Olives cut in rings
• 4 cloves garlic, minced
• 1/2 cup Krinos Extra Virgin Olive Oil


1. Peel, slice, and wash potatoes. Season with salt and pepper. Place in a Pyrex baking pan.
2. Add parsley, mint, tomatoes, olives, garlic, and olive oil. Bake at 400°F (204°C) for 15 minutes. Serve hot.

Serve as a side dish for fish or meat.
