Watermelon summer salad

INGREDIENTS

• 1 large slice of watermelon, seeds removed & cut into 1 inch cubes
• 16 cherry tomatoes, halved
• 1 onion, chopped
• 1 small cucumber, thinly sliced ribbons
• 2 tbsp fresh basil
• 2 tbsp fresh mint
• 80 g roasted almond flakes

Dressing
• ¼ cup feta cheese
• 2 tbsp red wine vinegar
• 1 ½ tsp fresh oregano, chopped
• 2 tbsp olive oil
• ⅓ cup water
• Sea salt
• Cracked black pepper
• ¼ tsp cayenne pepper

INSTRUCTIONS

In a large bowl, mix the cherry tomatoes, onion, cucumber and the watermelon.

To prepare the dressing, place all ingredients in a blender and blend until smooth and creamy.

Drizzle the salad with the dressing and gently toss. Transfer to a serving dish, sprinkle with herbs and almonds and serve.
