Taramosalata Dip

INGREDIENTS

• 3 medium potatoes OR 4 tbsp. potato flakes
• 1 1/2 cups olive oil
• 1 small walnut-sized onion
• 200 g Tarama
• 2 fresh lemons

Garnish
• 5 black olives
• 4 flat-leaf parsley leaves

INSTRUCTIONS

Preparation
1. Wash potatoes.
2. Peel onion, purée in food processor.

Cooking
1. Boil the potatoes in their skins.
2. Peel the potatoes and puree them in a food processor.
3. Add the onion puree and stir.
4. Add tarama and stir.
5. Add olive oil and stir.
6. Add 2 tablespoons of lemon juice and taste.
7. Add lemon juice to taste.
8. Garnish with olives and parsley. Keep refrigerated.

Serve with fresh or toasted bread.
Accompany with white wine or ouzo.
