• 4 cups seedless watermelon, 1-inch cubed
• 1 cup Krinos Feta Cheese, 1-inch cubed
• 1 cup thinly sliced fennel
• 1/4 cup thinly sliced red onion
• 1/4 cup chopped fresh mint
• salt & pepper to taste
Just before serving, in a large bowl, combine all ingredients and gently toss.
