semolina soup with feta cheese
4-5 cups water
1 tsp. salt
1 cup sour trahana
2 tbsp. butter or olive oil, fresh
1 tbsp Krinos Tahini (optional)
Krinos Feta Cheese or lemon juice (optional)
Chop onion finely.
Saute onion in a non-stick pan until soft. Add water and bring to a boil.
Add salt, trahana and tahini (optional); boil until thick.
Add oil or butter and stir.
Remove from heat, serve hot.
If desired, add lemon juice or pieces of feta cheese, allowing it to melt.
Serve with warm bread, fresh vegetable salad, and meat and/or fish dishes.
