Kasseri is the Kaskaval of Greece. Gold in colour, it is a mellow table cheese made from sheep’s milk, with a resilient but solid texture. Aged over 90 days, Kasseri has a mild, buttery taste and a springy texture. When fried, it maintains its sweetness and makes a truly outstanding "Saganaki".
